Chicken Kabsa from Maimoona Yasmeen’s Recipes YOU CAN ALSO REACH US ON : Youtube Subscribe -🤍 Website - 🤍 Facebook - 🤍 Google Plus - 🤍 Twitter - 🤍 Instagram - 🤍 Ingredients: For 4 servings Basmati chawal (basmai rice): ½ kg Murghi (haddi ke saath) (chicken with bones): 750 grams Pyaaz (onion): 1 Baadam (almonds): a handful Kaju (cashews): a handful Kishmish (raisins): a handful Tel (oil): 1 ½ tablespoon + 2 tablespoons Asli ghee (clarified butter): 1 tablespoon Lavang (black cloves): 2 Sabith elaichi (cardamoms): 2 Dalchini (cinnamon): 2 small sticks Adrak lehsan ka paste (ginger garlic paste): 1 tablespoon Haldi powder (turmeric powder): ½ teaspoon Lal mirch powder (red chili powder): 2 teaspoons Bareek namak (salt): 3 teaspoons Tomato puree: 1 tea cup Kata hua hara dhaniya (chopped coriander): a handful Kate hue pudine ke patte (chopped mint leaves): a handful Procedure: 1. Baadam aur kaju ko frying pan mein badami rang ka hone tak bhoon lijiye. 2. Chawal (rice) ko dhokar aadhe ghante ke liye bheegne ke liye rakh dijiye. 3. Tab tak ek cooking pan mein dedh (1 ½) tablespoon tel (oil) daliye aur ek tablespoon asli ghee daliye. 4. Kati hui pyaaz, lavang, cheeri hui elaichi aur dalchini ke pieces daliye. 5. 15 second ke liye bhuniye aur adrak lehsan ka paste dalkar kuchh der ke liye bhuniye. 6. Haldi powder, lal mirch powder aur namak dalkar milaiyye aur chicken ke bade pieces daliye. 7. Paanch minute (5 min) tak chicken ke pieces ko bhuniye. 8. Kata hua hara dhaniya, kate hue pudine ke patte aur tomato puree daliye. 9. 30 second tak bhuniye. (agar aap chahen toh is mein 1 teaspoon garma masala powder bhi daal sakte hain, iska zaiqa(taste) aur bhad jayega) 10. Dhakan dhak dijiye aur dheemi aanch par 20 minute tak pakaiyye ke chicken ke pieces achhi tarah se gal jaayen. 11. 20 minute baad, chicken ke pieces ko nikaal lijiye aur rakh lijiye. 12. Bheege hue chawal ka paani nithar kar, chawal ko is ubalte paani mein daliye, jis mein humne chicken ke pieces ko ubala tha. 13. Dhakkan dhak dijiye aur paani sookhne tak chawal ko pakaiyye. 14. Jab chawal pak jaayen, aanch band kar dijiye aur is mein kishmish dalkar dhakkan dhaanp dijiye. Kum se kum 5 minute ke liye dhakkan dhaanp kar rakhiye ke kishmish bhaanp par(steam) naram ho jaaye. 15. Ek chaude bartan (flat bottomed pan) mein 2 tablespoons tel (oil) daliye. 16. Jab tel garam ho jaaye, is mein pake hue chicken ke pieces daliye aur dhakkan dhaanp dijiye. 17. Chicken ke pieces ko dono taraf baadami aur crispy hone tak tal lijiye. 18. Bartan mein chawal nikalkar bhune hue baadam, kaju aur chicken ke pieces se sajaiyye. Chicken Kabsa tayyar hai.

Ingredients: 3 kg big lamb chunks 1 tsp Saffron Color 1 tbsp Natural Saffron 2 tbsp salt 4 cups Basmati rice 2 tbsp ghee oil 1 cup raisins 4 cinnamon sticks 1 tsp cardamom pods 1 tsp black pepper pieces ½ tsp cloves pieces 1 tsp black pepper pieces 2 dried lemon 2 sliced onions . مكونات: 3كيلو لحم خروف 1 ملعقة صغيرة لون الزعفران 1 ملعقة كبيرة الزعفران الطبيعي 2 ملعقة كبيرة ملح 4 أكواب أرز بسمتي 2 ملعقة كبيرة سمن 1 كوب زبيب 4 اصابع قرفة 1 ملعقة صغيرة هيل صحيحه 1 ملعقة صغيرة فلفل الأسود صحيحه ½ ملعقة صغيرة قرنفل صحيحه 1 ملعقة صغيرة فلفل الأسود صحيحه 2 الليمون المجفف 2 بصل مقطعه شرائح . Direction: 1) Cook onions with pinch of salt & sugar till soft. Add hard spice, 1 ½ tbsp. salt & raisins to cook for 2 minutes. 2) Turn off heat, add washed rice and 4 cups of hot water. 3) A small bowl with hot water add colored, natural Saffron, salt and brush it on meat. Make holes in meat with knife. 4) Place pizza rack or aluminum foil on top of rice, add meat, and cover with aluminum foil. 5) Cook in top rack oven at 200 Celsius for 3 hours. الطريقة: 1) طبخ البصل مع رشة الملح وسك حتى يلين. إضافة التوابل الصحيحة، 1 ½ ملعقة كبيرة الملح، زبيب، وملعقتين سمن لمدة دقيقتين. 2) اطفي النار، إضافة الأرز المغسول و4 أكواب من الماء الحار. 3) في وعاء مع قليلاً من الماء الساخن، اضيف الزعفران الملونة و الطبيعي وايضن الملح .وادعكه على اللحم. بسكين اعملي ثقوب في اللحم. 4) ضعي صنيه البيتزا أو الألومنيوم المخروم فوق الرز، ثمة الحم، و تغطية مع الألومنيوم. 5) في الفرن، يوضع في رف العلوي علي درجة حراره 200 مئوية لمدة 3 سعات .-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-. You will be surprised to know that the word Kabsa means any rice with any flesh, be it camel meat, chicken pigeon, lamb or a goat and the variance goes on. One way of making Kabsa is to cook the rice and the flesh apart and slap them together at service, and this one is called Mandi, the other and the more intricate way of making Kabsa is; cooking the meat and the rice together, called Madhghout or makbous or Kabsa Madghout. The word Madhghout means pressure cooked. In a Madhghout the rice sucks up all the juice from the flesh, it is fatty and delicious. The most significant confusion that you have about the word Kabsa is that it means the yellow rice. Arabic spicy sauce for rice dishes such as machboos, mandi, kabsa. Two versions of dakkous tomato sauce. Recipe 1: Dakkous (daqqus) sauce recipe (serves hot): 5-6 tomatoes (600 g) 2 tbsp. (30 ml) olive oil 5 garlic cloves 1 teaspoon of vinegar 1 chilli pod 1/2 teaspoon salt 1/2 teaspoon cumin fresh mint ( or dry) 1. Take a fresh tomatoes, remove the skin if tomatoes has a hard skin. Blend tomatoes into a puree. Keep Aside. 2. Add olive oil in the pad, add garlic and chilli, fry till soft and golden color. 3. Add 1 teaspoon of vinegar and after 20 seconds add the blended tomatoes. 4. Add tomato puree. 5. Stir to combine. Add salt, cumin and fresh or dry mint. 6. Cover and let it simmer for 15 mins. Note! if you prefer less thick sauce, add 1/2 cup of water. Recipe 2: Tomato sauce (without cooking). Serves cold. 4-5 medium tomatoes (approx. 500-600 g) 1 chilli pod Coriander fresh (or dry leaves 1/2 teaspoon) 1/2 head of red onion ( 2 tbsp.) 2 cloves of garlic salt, black pepper 1 tbsp. of lemon juice (or 1 teaspoon of vinegar) 1 tbsp. of tomato puree This version of cold dakkous need to have a texture of evenly chopped tomatoes and veges. If you have a small quantity just chop it just by knife or chopper, or just pulse it few times in a blender. simply combine all the ingredients, pulse it and add salt in the end. Chicken Kabsa | Chicken Mandi | Kuzhimanthi Recipe I am sharing with you the best recipes for Chicken Kabsa. Chicken Kabsa is a mixed rice dish that originates from Saudi Arabia but is commonly regarded as a national dish in many Arab states of the Persian Gulf. The rice is cooked within the juices and spices of the chicken which create an amazing flavor throughout the dish. Chicken Kabsa | Chicken Mandi | Kuzhimanthi Recipe Chicken Kabsa: 2 tbsp oil or butter 3 onions - sliced 1 tbsp - minced ginger 1 tbsp - minced garlic 1-3 green chili 3 dried bay leaves 5 cloves 5 cardamom pods 1 cinnamon stick ½ tsp ground nutmeg ½ tsp ground black pepper ¼ tsp ground cumin ½ tsp ground coriander 1 medium carrot 1 pureed fresh tomatoe 1 kg chicken 3 cups basmati rice, rinsed Water Salt to taste Slivered almonds (optional) Instructions: Heat oil in a large pan over on medium to high. When the oil is hot, add cloves, cinnamon, cardamom and bay leaves, and roast well. Add onions and saute until they are golden then add garlic and ginger. Add all spices, as well as Kabsa spice and combine well. Keep sauteing until you can smell the aromas. Add tomatoes and cook until everything is well incorporated. Add chicken pieces into the mix/paste then add enough water to cover the chicken. Continue to cook until the chicken is fully cooked. Then remove the chicken from the pan and place to the side. Add chili and carrot into the remaining water add additional water to ensure it is enough to cook the rice. Once the water is at a boil, add your cleaned and drained rice into the pot. (this is where all the flavor form your chicken and spices will be absorbed into your rice - it taste sooooo good). Add salt at this point. Heat a pan of oil to shallow fry your chicken pieces in. Add chicken into the pan and cook until brown on both sides. Remove from the pan. Once the rice is cooked to perfection, remove it from the heat and drain immediately. Serve on a large platter, garnish with coriander, almonds, and ghee. Prepare Mandi Rice: -In a bowl,add basmati rice,water,wash thoroughly and soak for 30 minutes then strain soaked rice & set aside. -In the same pot,add cooking oil,onion & fry until light golden. -Add garlic,green chillies & sauté for a minute. -Add capsicum & mix well. -Add bay leaves,cinnamon sticks,coriander seeds,cumin seeds,cloves,black peppercorns,green cardamom,star anise,chicken cube,mix well & cook for 1-2 minutes. -Add strain & soaked rice & mix well. -Turn off the flame,add water,salt & mix well. -Place steamer on top of the pot & add cooked chicken pieces,apply remaining marinade with the help of brush,cover with aluminum foil & lid. -Turn on the flame & cook on high flame for 4-5 minutes to build up steam then steam cook on low flame for 20-25 minutes. -Give coal smoke for 2 minutes. -Garnish with almonds,fresh coriander & serve chicken mandi with mandi rice & sauce!

Homemade, Saudi Arabian spice mix… Aromatic & flavorful saudi spice mix can be made with few ingredients.Saudi spice mix is a popular spice used in Arabian & Middle Eastern cuisine. Used in making kabsa chicken,mandi,rice, soups and in many other meat-based dishes. Making homemade Saudi Spice Mix is pretty easy, you just have to grind whole spices into a fine powder and store in an airtight container. Ingredients: 2 tablespoons coriander seeds 1 tablespoon cinnamon sticks 1 tablespoon cumin seeds 1 teaspoon cloves 1 tablespoon green cardamoms 1 dried lemon 1 teaspoon turmeric powder Method: Dry roast all the spices in a pan on low heat. Make sure to not burn them. When you start to see little browning and aromatic aroma. Let it cool down for 5 minutes. Put it in the spice grinder and make fine powder. Sift the powder and add turmeric powder. Store in a container or jar and use it for many Middle Eastern dishes.
