De Lactarius Deliciosus. Een van de lekkerste wilde paddenstoelen als je het mij vraagt. Je vindt ze aan bosranden tussen het gras. En ze vinden een beetje hoogte wel lekker. Dus vanaf 400m ongeveer. Een melkzwam, maar er ontstaan nauwelijks zichtbare druppeltjes bij het inkerven van de plaatjes. Bij het afsnijden is de steel knal oranje en verkleurt binnen 30 min naar een zachte wijnrode kleur.

It grows on the ground in both deciduous and coniferous forests, where it forms mycorrhizal associations with a broad range of trees. The fruit body color ranges from dark blue in fresh specimens to pale blue-gray in older ones. The milk, or latex, that appears when the mushroom is damaged.
I can barely contain my excitement at sharing this incredible milky mushroom with you guys, this is the #CorrugatedMilkCap or #Lactifluuscorrugis. This is a mycorrhizal species that fruits in Eastern North America in summer, associated primarily with Oak species. When young it has a deep red/purple cap covered with a fine white felt, but as it matures the cap turns upwards and exhibits well defined corrugation (thus the name). The gills are a beautiful coppery color and will immediately spill forth a milky substance when injured. As with other milk caps, this mushroom exudes a sticky latex to deter predators from eating the young mushroom. As a bug or slug goes in to monch, the latex come spilling out from vacuoles (big intracellular bubbles) under turgor pressure in the mushroom flesh. . Lactifluus corrugis is a very solid meaty mushroom, but can be slightly grainy if cooked straight up on a pan (thanks to the spheroid cells of Lactarius/Russula species). My favorite way to prep them is to roast at 400F for 20m or to boil in a garlic, dill, bays peppercorn vinegar mix then top with oil (conserva). . Trigger/Content Warning - Knife Use Behold the #GoldenMilkCap or #Lactariusalnicola. This is a mycorrhizal species that fruit prodigiously under Live Oak this time of year in Napa. It is extremely acrid/spicy/bitter and is generally not consumed as an edible - although I hear that some people like to boil it and salt it. I have tried boiling, but found it still smell and tasted weird afterwards. I have a friend experimenting with lactofermenting, but haven’t heard how that went. . Milk caps are named for the sticky latex or “milk” they exude when injured. This happens when the mushroom is young and there is lots of turgor pressure built up in their cells. The latex is stored within central vacuoles and released upon injury as a self defense mechanism against mycovores (slugs, bugs, etc...). As the mushroom matures, the cells expand, relieving the turgor pressure, so no more milk spills out. By this point the mature mushroom has had a chance to release its spores and no longer needs protection from predation. Le lactaire délicieux, Lactarius deliciosus, appartient à la famille des Russulaceae 🍄 Il pousse principalement sous les pins et sur des sols plutôt calcaires. Pour le reconnaître, les champignons du genre Lactarius sont caractérisés par leur lait et leur chair cassante. Ici, le lait est orange carotte, très vif et reste orange.
